Shavige Baath or Vermicelli
Upma is a very simple and delicious breakfast dish made with vermicelli, onions
and mixed vegetables. You can add vegetables of your choice. I have used carrot
or peas to make it more nutritious. It is high on fiber and low on calories.
In
India vermicelli is known as seviyan or semiyan.It is called Shavige in
Kannada. The noodles are used in a number of dishes including a variation
of kheer, a sweet dessert similar to rice pudding. Vermicelli are
also used in many parts of India to make a popular dish called upma.
To prepare it, dry oil-roasted vermicelli are boiled with a choice of
vegetables.

Cooking time: 20 minutes

Onion finely chopped

1-2 medium sized

Ginger paste

Lemon juice

Method
In
a pan heat oil, add mustard seeds, when they splutter add curry leaves and
sauté for 10-20 seconds. Add green chilies and onions and fry till onions are
cooked and slightly brown. Add ginger paste and sauté for few seconds. Add in
the boiled vegetables and sauté.
Add
boiling water about 1 cup and increase the flame to high. When the water is
boiling add vermicelli and stir well. Now lower the flame to low and let the
vermicelli cook. Keep boiling water handy and add as required.
Keep
stirring for about 2 minutes and when the vermicelli is transparent, add lemon
juice and mix well. Turn off heat and let it cool for a bit before stirring.
Garnish with coriander leaves.
Points
to remember:
- I use Anil brand vermicelli. But you can use any brand or variety but the only difference would be cooking time and water quantity. Refer cooking instructions on the pack for water quantity and cooking time.
- Fluff up the vermicelli with a fork before serving to avoid sticking.
- You can use mixed vegetables like carrots, beans, peas, corn, etc.
